One of most favourite dish in West Java Indonesia is Pepes Ikan Mas (Carp Stew). This is recipes : Ingredients 1 kg/2 lbs carp fish Salt 5 tsp lemon juice 10 red chili 4 bay leaf 5 tsp palm oil to steam 10 basil leaf 2 liter water to steam Banana leaf to wrap To slice 10 pcs onions 6 cm ginger 3 cm turmeric 3 pcs big red chili 2 leek 10 garlic 2 cm galangal 2 lemongrass Puree of  10 pcs candlenut 2 pcs garlic 1 tsp shrimp paste 1 tsp salt 1/2 tsp nutmeg 1 tsp palm sugar 4 pcs onions 1 tsp corriander 1 tsp palm oil 1 tsp msg/vitsin How to cook 1. Clean carp, scales, throw away the bowel of fish 2. Coat lemon juice and salt 3. Mix sliced ingredient and pure, coat to fish, include inner of fish. 4. Wrap with banana leaf 5. Steam with 2 liter water and 2 tsp palmoil. Wait 2-3 hours until cooked 6.Ready to eat.
